Chef Dan’s Simple Beef Stroganoff is super easy, delicious and a great way to use up the beef in your freezer.

Serves 3-4

Ingredients:

1 Onion

2-4 cloves Garlic 

200g Mushrooms 

500g Beef Fillet – Thinly sliced 

 1 tbsp Plain Flour

 1 tsp English mustard

300g Creme Fraiche 

200ml Beef stock 

Tagliatelle/rice 

A big pinch Fresh parsley/basil/tarragon 

 

Method

0. Take out the meat from the freezer and place in the fridge to defrost for 24 hours

1. Dice your onion and gently fry in olive oil for around 5 minutes or until onions start to soften.

2. Roughly chop up your garlic and also add to the pan and continue to cook.

3.Chop mushrooms to your preferred size and add to the pan. You may need to add a drop more oil and fry for 3-4 mins. 

4.In a big mixing bowl add a large spoonful of flour on top of the beef and rub it in. 

5.Once the mushrooms start to soften remove them, the onions and garlic and place in a bowl. 

6.A little splash more oil in the pan and fry on a high heat until the beef is nice and brown all over. 

7.Add the mushrooms etc back in… a tsp of mustard and mix in. 

8.Add the creme fraiche and the stock and mix everything together. Bring everything up to a gentle simmer and allow all the flavours to combine for 10 or so mins. 

9.Serve with pasta or rice

10. And to finish sprinkle with some fresh herbs, traditionally you would add parsley but I like to mix it up some time with some basil or maybe tarragon.
