It’s that time of year I love to combine my love for food and my love for reducing food waste! Eggs are one of the biggest wasted items in UK households so why not turn them into something the whole family will go all gooey for…… A sexy chocolate mousse! This recipe uses 4 eggs whites and yolks so a great way to use up lots that may be getting to the end of their shelf life….. And you mix it with chocolate!! I’m in LOVE!!! 

 

 

Ingredients:

150g Dark Chocolate (70%)

4 Eggs

50g Caster sugar

150ml Double cream

Pinch Salt

 

Serving: Just for 2

 

Instructions:

  1. Carefully melt chocolate in a bowl over steaming water. (Be very careful to not get steam burnt)
  2. Separate the eggs and in a very clean bowl add in egg whites and a pinch of salt and whisk until stiff peaks.
  3. In a separate bowl whisk cream until also stiff but don’t over whisk it so it curdles. 
  4. In another separate bowl cream together the egg yolks and sugar until combined and slightly pale. 
  5. Very gently fold each of the bowl into one but fold the whites last. Keep folding until well combined and gorgeous looking! 
  6. Place in small bowls and place in the fridge for 2 hours to set.
  7. Lick chocolate bowl clean while waiting! 
  8. Top mousse with anything from nuts to berries.
