Hey Team! This recipe is so super easy but quite the show stopper! I flavour and roast the whole cauliflower with a curry sauce and always serve it in the middle of the table as the centrepiece for my guests to slice their own bit. Awesome for a veganuary dinner party!

 

Ingredients:

1x Cauliflower (medium or large)

2 tbsp Curry paste

400ml Coconut milk

Handful of fresh coriander

Handful of raisins

 

Instructions:

  1. Preheat the oven to 180 C / 350 F
  2. Remove the leaves of the cauliflower and place it on a baking tray lined with parchment paper.
  3. Mix half the tin of coconut milk mix in with half the curry paste. Mix in a dash of olive oil.
  4. Paste the curry and coconut mix over the top.
  5. Bake for around 50 mins….
  6. Now for the last 10 mins in a saucepan put in the remaining paste, coconut milk and simmer until well combined.
  7. Once cauliflower is cooked and soft, place on a serving dish and gently pour over the creamy mix, sprinkle with fresh coriander and raisins
  8. Place in the centre of the table and allow your guests to carve large slices for their plates
