We LOVE Chef Dan’s No Waste Salsa Verde Recipe!
Salsa Verde literally means ‘Green Sauce’ and can be made with a variety of herbs, which makes it the perfect recipe to use up your herbs before they go off. It is traditionally served with meat, but it also pairs great with vegetable dishes. So many different cuisines have a variation on the sauce; Britain’s ‘Mint Sauce’, the French ‘Salsa Verte’ and Argentina’s ‘ Chimichurri’; here is ours!
Ingredients
2 handfuls of any leftover herbs
1 clove of Garlic
1 tbsp Capers
1 tsp Mustard
A few small gherkins or cornichons
1 tsp White wine vinegar
Generous gulp of olive oil
Salt
Peper
Instructions

Scrunch the herbs into a ball and chop rough, keep stalks unless they are really thick!

Crush with a pestle and mortar (you can always use a rolling pin if you don’t have one to hand)

Finally chop you gherkins and garlic

Add your capers

Spoon in the mustard, white wine vinegar

Add a glug of olive oil and mix well!

Add salt and pepper to taste

Store it in a jar or airtight vestle to make it last longer!
